Our Founder
As one of the top sommeliers in France, Cédric Bilien (Founder of Capitale Wine) has the expertise of customizing unique wine experiences that best matches with every individual and occasion. Working with Eric Beaumard and Enrico Bernardo (The Best Sommelier of the World), Cédric started his career in Four Seasons Hotel George V Paris, where he has developed entrenched relationship with top-notched winemakers in France since late 1990s.
In 2005, he moved to Hong Kong and started working in Michelin 3-star restaurant, Caprice. He then became the Head Sommelier in Four Seasons Hotel Hong Kong and played an important role of uplifting the local industry standards to new heights.
In 2009, he founded his own wine company, Capitale Wine International Company Limited, and he soon emerged as the de facto chief sommelier of sommeliers in the market.
